Do you really want to know what amylase crystals are? I know this is a journal and you would expect some elaboration, but sometimes a little mystery is best when it comes to alchemical reagents.
Ugh, you're still here? Fine. Amylase crystal is a concentrated deposit of saliva. There's no way of sugar-coating it: you're holding some sun-dried spit right here. And just as it does wonders for digestive processes, it's pretty good at breaking down roughage in potion-crafting.
